Ingredients
  

Chocolate Base

  • 200 g dark chocolate at least 70% cocoa, chopped
  • 1 tbsp cocoa butter for a smooth texture
  • 1/2 tsp cardamom powder adds warmth and depth
  • 1/4 tsp saffron threads lightly crushed
  • 1 tsp rosewater for a delicate floral note
  • 2 tbsp chopped pistachios for crunch and visual appeal
  • 2 tbsp chopped dates adds natural sweetness
  • 1/2 tsp sea salt flakes for contrast and balance

Optional Gold Dust Finish

  • 1/4 tsp edible gold dust for a luxurious finish

Instructions
 

  • Melt the chocolate and cocoa butter using a double boiler or heatproof bowl set over simmering water. Stir gently until smooth.
  • Remove from heat and mix in cardamom powder, saffron threads, and rosewater.
  • Let the mixture cool slightly before folding in the chopped pistachios and dates.
  • Pour the chocolate mixture into silicone chocolate bar molds and smooth the tops with a spatula.
  • Sprinkle with sea salt flakes and lightly dust with edible gold for a luxurious finish.
  • Refrigerate for at least 90 minutes, or until fully set.
  • Carefully remove from molds and store in an airtight container in a cool place.

Notes

For an even silkier texture, temper the chocolate before molding by heating to 45°C (113°F), cooling to 27°C (80°F), and reheating to 31°C (88°F).
